Ingredients:
- 0.5 cup onion, finely chopped
- 3 cups tomato, pureed
- 1 tsp ginger paste
- 1 tsp cumin seeds
- 0.5 tsp kitchen king masala (optional)
- 0.5 tsp turmeric powder
- 0.5 tsp red chili powder
- 1 green chili, finely chopped
- 1/4 cup coriander leaves, chopped
- 0.5 cup capsicum, chopped
- 0.5 cup carrot, chopped
- 0.33 cup beans, chopped
- 0.25 cup cauliflower, chopped
- 0.25 cup peas
- 1 cup water
- 1 tsp oil
Instructions:
Prepare the Masala: Heat 1 tsp oil in a pan. Add cumin seeds and let them splutter.Add finely chopped onions and sauté until golden brown.Add ginger paste and green chili, sauté for a minute.Add tomato puree and cook until the oil separates.
Add Spices: Add turmeric powder, red chili powder, and kitchen king masala (if using). Mix well.
Add Vegetables: Add chopped capsicum, carrot, beans, cauliflower, and peas to the masala. Mix well.
Cook the Vegetables: Add 1 cup of water, cover, and cook on medium heat until the vegetables are tender and the flavors are well combined.
Garnish and Serve: Garnish with chopped coriander leaves.
Serve hot with roti or rice.
