Ingredients:
- 2 cups spinach leaves, washed and chopped
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 2 green chilies, finely chopped
- 1 tsp ginger-garlic paste
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- Salt, to taste
- 1 tbsp oil
- Fresh coriander leaves, for garnish
Instructions:
Prepare Ingredients: Wash and chop the spinach leaves. Finely chop the onion, tomato, and green chilies.
Sauté Spices: Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds. Let them splutter. Add finely chopped onions and sauté until golden brown. Add ginger-garlic paste and green chilies. Sauté for 2-3 minutes.
Add Tomatoes and Spices: Add chopped tomatoes, turmeric powder, and red chili powder.
Cook until tomatoes soften.
Cook Spinach: Add chopped spinach and salt.
Stir well and cook until spinach is wilted and cooked through (about 5-7 minutes).
Garnish and Serve: Garnish with fresh coriander leaves.
Serve hot with roti, chapati, or rice.
