Ingredients:
- 200-250 g chicken breast, chopped
- 1/4 cup cauliflower, chopped
- 1/4 cup beans, chopped
- 1/2 carrot, sliced
- 1/4 cup green, yellow, and red capsicum, chopped
- 1/4 cup onion, chopped
- 1 tsp ginger garlic paste
- Salt, to taste
- 1/3 tsp black pepper
- Juice of 1/2 lemon
- 1 tsp oregano
- 1/2 tsp chili flakes
- 1 tsp oil (or use oil spray)
- 1/4 cup broccoli, chopped
- 1/4 cup mushroom, sliced
- 1/4 zucchini, sliced
Instructions:
Prepare the Chicken:
Wash and chop the chicken breast into bite-sized pieces.
Sauté the Chicken: Heat 1 tsp oil (or use oil spray) in a large pan over medium heat. Add the chicken pieces and cook until they are no longer pink. Remove the chicken from the pan and set aside.
Prepare the Vegetables: Wash and chop all the vegetables as required.
Sauté the Vegetables: In the same pan, add ginger garlic paste and sauté until fragrant.
Add 1/2 cup water.
Add onion and sauté until translucent. Add cauliflower, beans, carrot, broccoli, mushroom, zucchini, and capsicum.
Cook for 5-7 minutes till water dries, stirring occasionally.
Combine Chicken and Vegetables: Add the cooked chicken back to the pan with the vegetables.
Season with salt, black pepper, oregano, and chili flakes. Mix well. Squeeze lemon juice over the mixture and stir to combine.
Serve: Serve hot as a side dish or a healthy snack.
