Ingredients:
- 1/4 cup (40 g) yellow moong dal
- 1/4 cup (30 g) brown rice
- 1 cup (200 ml approx.) water
- 1 tsp olive oil
- 1 small onion (chopped)
- 50 grams each of mixed vegetables (tomato, carrot, green peas,
- French beans)
- 1/2 tsp ginger garlic paste
- 1 green chili (finely chopped)
- 1/4 tsp cumin seeds
- 1/2 tsp salt (or as per taste)
- A pinch of turmeric powder
- 3-4 coriander leaves (freshly chopped)
Instructions:
Prepare the Ingredients: Wash and soak the yellow moong dal and brown rice together for about 30 minutes. Drain the water.
Cook the Khichdi: Heat 1 tsp olive oil in a pressure cooker. Add cumin seeds and let them splutter. Add chopped onion and sauté until translucent. Add ginger garlic paste and green chili, sauté for a minute. Add mixed vegetables (tomato, carrot, green peas, French beans) and sauté for another 2-3 minutes. Add soaked moong dal and brown rice to the cooker. Stir well. Add 1 cup water, salt, and a pinch of turmeric powder. Mix well.
Pressure Cook: Close the lid and cook on medium flame for 3-4 whistles.
Let the pressure release naturally.
Garnish and Serve: Open the lid and give a gentle stir.
Garnish with freshly chopped coriander leaves.
