Ingredients:
- 1/2 cup rice
- 1/2 cup mixed sprouts
- 1/3 cup tomatoes, chopped
- 1/3 cup carrots, chopped
- 1/3 cup green peas
- 1 tsp cumin seeds
- 1 bay leaf (tej patta)
- 1/3 cup onions, chopped
- 1/2 tsp ginger, grated
- 1 green chili, finely chopped
- 1/4 tsp turmeric powder
- 1/4 tsp red chili powder
- 2.5 cups water
- Salt to taste
- 2 tbsp coriander leaves, chopped
- 1.5 tbsp olive oil
Instructions:
Prepare the Ingredients: Rinse the rice and soak it for 30 minutes. Drain before using. Wash and chop all the vegetables.
Cook the Pulav: Heat olive oil in a pressure cooker. Add cumin seeds and let them splutter. Add the bay leaf and sauté for a few seconds. Add onions, ginger, and green chili. Sauté until the onions are golden brown. Add tomatoes, carrots, and green peas. Sauté for a few minutes. Add turmeric powder, red chili powder, and salt. Mix well. Add the mixed sprouts and soaked rice. Sauté for 2-3 minutes. Add 2.5 cups of water and bring it to a boil. Close the lid of the pressure cooker and cook for 2 whistles on medium heat.
Finish and Serve: Release the pressure and open the cooker.
Garnish with chopped coriander leaves.
Serve hot with yogurt or raita.
