Ingredients:
- 2 cups potato (diced)
- 1 cup cauliflower (gobhi florets)
- 2 tsp oil
- 1 tsp cumin seeds
- 1 cup onion (chopped)
- 1 tomato (chopped)
- 1 tsp ginger garlic paste
- 1/4 cup coriander leaves (chopped)
- 1 tsp turmeric powder
- 1 green chili (finely chopped)
- Salt (as per taste)
- A pinch of asafoetida (hing)
- 1/3 cup water
Instructions:
Heat Oil: Heat 2 tsp oil in a pan. Add cumin seeds and let them splutter. Add a pinch of asafoetida.
Sauté Onions: Add chopped onions and sauté until golden brown. Add ginger garlic paste and green chili. Sauté for a minute.
Cook Tomatoes: Add chopped tomatoes and cook until soft and oil separates. Add Spices and Vegetables: Add turmeric powder and salt. Mix well. Add diced potatoes and cauliflower florets. Mix to coat with the masala.
Cook with Water: Add 1/3 cup water. Cover and cook on low heat until potatoes and cauliflower are tender.
Finish: Garnish with chopped coriander leaves.
Stir and cook for another 2-3 minutes.
