Ingredients
- Rolled oats: 1 cup (dry roasted and ground into a coarse powder)
- Natural peanut butter (unsweetened): 3 tbsp
- Cocoa powder (unsweetened): 2 tbsp
- Dates (pitted): ½ cup (soaked in warm water and blended into a paste)
- Chia seeds or flaxseeds: 1 tbsp
- Milk (low-fat or plant-based): 2-3 tbsp (as needed)
- Vanilla extract: ½ tsp (optional)
- Crushed almonds or walnuts: 2 tbsp (optional)
Preparation
In a bowl, mix oats powder, cocoa powder, and chia seeds.
Add the date paste, natural peanut butter, and vanilla extract. Mix well until combined.
Gradually add milk, 1 tablespoon at a time, to bind the mixture into a dough-like consistency.
If using, fold in crushed almonds or walnuts for added crunch.
Roll the mixture into bite-sized balls.
Chill the balls in the refrigerator for 20-30 minutes to set.
Servings: Makes about 10-12 balls
