Ingredients
- Paneer: 100g, diced into small cubes
- Sweet corn: 1 cup, boiled
- Bell peppers (any color): ½ cup, diced
- Cucumber: ½ cup, diced
- Tomatoes: ½ cup, diced (seeds removed)
- Lettuce leaves: 4-5, roughly torn (optional)
- Lemon juice: 1 tbsp
- Olive oil: 1 tbsp
- Black pepper powder: ½ tsp
- Red chili flakes: ½ tsp (optional)
- Salt: to taste
- Fresh coriander or parsley: 2 tbsp, chopped
Preparation
In a large bowl, combine boiled sweet corn, paneer cubes, diced bell peppers, cucumber, and tomatoes.
Add torn lettuce leaves if using.
In a small bowl, whisk together lemon juice, olive oil, black pepper, red chili flakes (if desired), and salt to prepare the dressing.
Pour the dressing over the salad and toss gently to combine all ingredients.
Garnish with fresh coriander or parsley and serve immediately.
