Ingredients
- Firm tofu: 1 cup (crumbled)
- Onion: 1 small (finely chopped)
- Tomato: 1 medium (finely chopped)
- Bell peppers/capsicum: 1/2 cup (finely chopped)
- Spinach: 1/2 cup (chopped)
- Turmeric powder: 1/4 tsp
- Cumin powder: 1/2 tsp
- Red chili powder (optional): 1/4 tsp
- Salt: to taste
- Black pepper: to taste
- Olive oil/ Vegetable oil: 1 tsp
- Whole-grain bread: 2 slices (toasted)
Preparation
Heat olive oil in a non-stick pan over medium heat.
Add the chopped onions and sauté until translucent.
Stir in tomatoes and bell peppers. Cook for 2-3 minutes until softened.
Add the crumbled tofu to the pan. Mix well with the vegetables.
Sprinkle turmeric powder, cumin powder, red chili powder (if using), salt, and black pepper. Stir to combine.
Add chopped spinach and cook for 2 minutes until wilted.
Adjust seasoning as per taste. Remove from heat.
Serve the tofu scramble with toasted whole-grain bread.
Servings: Makes 1 serving.
Notes
- You can add other vegetables like mushrooms or zucchini for variety.
- Garnish with fresh herbs like cilantro or corriander for extra flavor.
- For a spicier version, add finely chopped green chilies.
