Ingredients
- Flattened rice (poha): 1 cup
- Milk: 3 cups
- Sugar: 2–3 tbsp (adjust as per sweetness preference)
- Cardamom powder: ½ tsp
- Ghee: 1 tbsp
- Chopped nuts (cashews, almonds, pistachios): 2 tbsp
- Raisins: 1 tbsp
- Saffron strands (optional): a few
- Water: 1 cup
Preparation
Rinse the poha in water for 2-3 minutes to soften it, then drain and set aside.
Heat ghee in a pan, and add the chopped nuts and raisins. Fry them until golden brown and set aside.
In the same pan, add the soaked poha and water. Cook for 2-3 minutes on medium heat.
Add the milk and bring it to a boil. Reduce the heat and simmer for 8–10 minutes, stirring occasionally until the poha softens completely.
Add sugar, cardamom powder, and saffron (if using), and stir well until the sugar dissolves.
Cook for another 5 minutes, allowing the kheer to thicken.
Garnish with the fried nuts and raisins before serving.
Serving Size: Makes about 3 servings.
Notes
- You can adjust the sweetness according to your preference.
- Poha kheer can be served warm or chilled, depending on your preference.
