Ingredients
- Soya chunks: 1 cup
- Onion (finely chopped): 1 medium
- Tomato (finely chopped): 1 medium
- Green chili (finely chopped): 1
- Ginger-garlic paste: 1 teaspoon
- Turmeric powder: ¼ teaspoon
- Red chili powder: ½ teaspoon
- Coriander powder: 1 teaspoon
- Garam masala: ½ teaspoon
- Cumin seeds: ½ teaspoon
- Oil: 1 tablespoon
- Fresh coriander leaves (chopped): 2 tablespoons
- Salt: to taste
Preparation
Boil water and soak soya chunks for 10-15 minutes until soft. Drain and squeeze out excess water. Chop them finely or pulse briefly in a food processor.
Heat oil in a pan and add cumin seeds. Let them splutter.
Add onions and sauté until golden brown.
Add ginger-garlic paste and green chili. Sauté for a minute until fragrant.
Stir in tomatoes and cook until soft.
Add turmeric, red chili powder, coriander powder, and salt. Mix well.
Add chopped soya chunks and combine thoroughly with the masala.
Cook for 4-5 minutes, stirring occasionally.
Add garam masala and cook for another minute.
Garnish with coriander leaves and serve hot.

- Serve with roti, paratha, or toasted bread for a healthy, protein-rich meal.
- It can also be used as a filling for sandwiches or wraps.
