Ingredients
- Chickpeas (boiled or canned, drained & rinsed) : 1 cup
- Ripe Avocado : 1 (diced)
- Cherry Tomatoes : ½ cup (halved)
- Cucumber : ½ cup (diced)
- Onion : ¼ cup (finely chopped)
- Fresh Coriander or Parsley : 2 tbsp (chopped)
- Olive Oil : 1 tbsp
- Lemon Juice : 1 tbsp
- Garlic : 1 small clove (minced)
- Salt & Black Pepper : to taste
- Roasted Sesame Seeds or Sunflower Seeds : 1 tbsp (optional)
Preparation
In a large bowl, combine chickpeas, avocado, cherry tomatoes, cucumber, and onion.
In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
Pour the dressing over the salad and toss gently to mix.
Garnish with fresh coriander/parsley and roasted seeds.
Serve fresh and enjoy!

Notes
- Add paneer, tofu, or feta cheese.
- Include bell peppers or shredded carrots
- Prepare everything except avocado and add it before serving to avoid browning.
