French Beans Curry

Ingredients

  • French beans, chopped: 1 cup
  • Onion, finely chopped: 1 medium
  • Tomato, finely chopped: 1 medium
  • Ginger-garlic paste: 1 teaspoon
  • Green chili, chopped: 1
  • Mustard seeds: ½ teaspoon
  • Cumin seeds: ½ teaspoon
  • Turmeric powder: ¼ teaspoon
  • Red chili powder: ½ teaspoon
  • Coriander powder: 1 teaspoon
  • Garam masala: ½ teaspoon
  • Salt: to taste
  • Oil: 1 tablespoon
  • Water: ½ cup
  • Fresh coriander leaves, chopped: 2 tablespoons

Preparation

Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.

Add chopped onions and sauté until golden brown.

Add ginger-garlic paste and chopped green chili, sauté for a minute.

Add chopped tomatoes and cook until soft.

Add turmeric, red chili powder, coriander powder, and salt. Mix well.

Add chopped French beans and mix with the masala.

Pour in ½ cup of water, cover, and let it cook on low heat for 10-12 minutes until beans are tender.

Once cooked, add garam masala and mix well.

Garnish with fresh coriander and serve hot with roti or rice.

Servings: 2

Notes

  1. For extra protein, add cooked dal (toor or moong) or tofu.
  2. You can replace tomatoes with curd for a tangy twist.
  3. Add grated coconut for a South Indian-style curry.
