Ingredients
- French beans, chopped: 1 cup
- Onion, finely chopped: 1 medium
- Tomato, finely chopped: 1 medium
- Ginger-garlic paste: 1 teaspoon
- Green chili, chopped: 1
- Mustard seeds: ½ teaspoon
- Cumin seeds: ½ teaspoon
- Turmeric powder: ¼ teaspoon
- Red chili powder: ½ teaspoon
- Coriander powder: 1 teaspoon
- Garam masala: ½ teaspoon
- Salt: to taste
- Oil: 1 tablespoon
- Water: ½ cup
- Fresh coriander leaves, chopped: 2 tablespoons
Preparation
Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and chopped green chili, sauté for a minute.
Add chopped tomatoes and cook until soft.
Add turmeric, red chili powder, coriander powder, and salt. Mix well.
Add chopped French beans and mix with the masala.
Pour in ½ cup of water, cover, and let it cook on low heat for 10-12 minutes until beans are tender.
Once cooked, add garam masala and mix well.
Garnish with fresh coriander and serve hot with roti or rice.

Notes
- For extra protein, add cooked dal (toor or moong) or tofu.
- You can replace tomatoes with curd for a tangy twist.
- Add grated coconut for a South Indian-style curry.
