Ingredients:
- 250 grams bhindi (okra), chopped
- 2 medium potatoes, chopped
- 1 large onion, sliced
- 1 large tomato, chopped
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 2 tablespoons oil
- 1 teaspoon amchur powder (dry mango powder)
- Fresh coriander leaves for garnish
Instructions:
Prepare the Ingredients: Wash and chop the bhindi into 1-inch pieces. Peel and chop the potatoes into small cubes. Slice the onion and chop the tomato.
Cook the Potatoes: Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add the chopped potatoes and sauté for 5-6 minutes until lightly golden.
Add Onion and Spices: Add the sliced onions and sauté until they turn translucent. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
Cook the Bhindi: Add the chopped bhindi to the pan. Mix well. Cover and cook on low heat, stirring occasionally, until the bhindi and potatoes are tender.
Add Tomato and Amchur: Add the chopped tomato and cook until soft. Add amchur powder and mix well.
Finish and Serve: Garnish with fresh coriander leaves.
Serve hot with roti or rice.
