Avocado Chickpea Salad

Ingredients

  • Chickpeas (boiled or canned, drained & rinsed) : 1 cup
  • Ripe Avocado : 1 (diced)
  • Cherry Tomatoes : ½ cup (halved)
  • Cucumber : ½ cup (diced)
  • Onion : ¼ cup (finely chopped)
  • Fresh Coriander or Parsley : 2 tbsp (chopped)
  • Olive Oil : 1 tbsp
  • Lemon Juice : 1 tbsp
  • Garlic : 1 small clove (minced)
  • Salt & Black Pepper : to taste
  • Roasted Sesame Seeds or Sunflower Seeds : 1 tbsp (optional)

Preparation

In a large bowl, combine chickpeas, avocado, cherry tomatoes, cucumber, and onion.

In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.

Pour the dressing over the salad and toss gently to mix.

Garnish with fresh coriander/parsley and roasted seeds.

Serve fresh and enjoy!

Notes

  • Add paneer, tofu, or feta cheese.
  • Include bell peppers or shredded carrots
  • Prepare everything except avocado and add it before serving to avoid browning.
