Avocado toast with egg

Ingredients:

  • Ripe Avocado – 1/2
  • Lemon Juice – 1 tsp
  • Multigrain/ Whole Wheat Bread – 2
  • Eggs – 2
  • Olive Oil – 1 tsp (for frying eggs)
  • Salt – to taste
  • Black Pepper – to taste
  • Red Chili Flakes – a pinch (optional, for heat)
Instructions:

Prepare Avocado Spread: Mash the avocado with lemon juice, salt, and pepper.

Toast the Bread: Toast the slices of bread until golden brown.

Cook the Eggs: Heat olive oil in a pan over medium heat. Fry the eggs sunny side up, seasoning with salt and pepper.

Assemble the Toast: Spread the avocado mixture evenly on each slice of toasted bread. Place a sunny side up egg on top of each slice.

Sprinkle with red chili flakes if desired.

Serving Size: Makes 2 servings
