Instructions:
This recipe makes 1 serving of Barbeque Chicken.
Wash the chicken and chop into small pieces.
Make a few shallow cuts on each piece to allow the marinade to seep through.
To prepare the marinade, mix curd, lemon juice and all the spices mentioned. Mix well.
Now place the chicken pieces into the marinade and coat evenly. Allow it to rest for minimum 2-3 hours / overnight for best flavour.
Pre-heat your oven / grill. If using grill, lightly oil the grill to prevent sticking.
If using oven, heat the oven to 425F.
Place your marinated chicken pieces in the oven / grill and cook for 40-45 minutes or until the chicken pieces are cooked and tender.
Turn your chicken pieces after every few minutes to ensure they are evenly cooked from all sides.
Garnish with coriander leaves and serve with a side of Coriander Chutney. Serve hot!
