Ingredients
- French beans, chopped: 1 cup
- Carrots, julienned or thinly sliced: 1 cup
- Oil: 1 tablespoon
- Mustard seeds: ½ teaspoon
- Cumin seeds: ½ teaspoon
- Green chili, chopped: 1 (optional)
- Ginger, finely chopped: 1 teaspoon
- Salt: to taste
- Lemon juice: 1 teaspoon (optional)
- Turmeric powder: ¼ teaspoon
- Red chili powder: ½ teaspoon (adjust to taste)
- Coriander powder: 1 teaspoon
- Black pepper powder: ¼ teaspoon (optional)
Preparation
Heat oil in a pan.
Add mustard seeds and cumin seeds; let them splutter.
Add chopped ginger and green chili; sauté for a few seconds.
Add the chopped carrots first as they take longer to cook. Stir-fry for 2-3 minutes.
Add French beans and mix well.
Add turmeric, red chili powder, coriander powder, and salt.
Stir to coat the vegetables with the spices.
Cover and cook on low heat for 5-7 minutes, stirring occasionally until tender but still crisp.
Remove the lid and stir-fry on high heat for 1-2 minutes to get a slight crunch.
Add black pepper and a squeeze of lemon juice for added flavor.
Garnish with fresh coriander leaves if desired.
Serve hot with roti, paratha, or as a side with rice and dal.
