Ingredients
- French beans, chopped: 1 cup
- Potatoes, diced: 1 medium (about 1 cup)
- Onion, finely chopped: 1 small (optional)
- Tomato, chopped: 1 medium
- Ginger, grated: 1 teaspoon
- Green chili, chopped: 1 (optional)
- Oil: 1 tablespoon
- Cumin seeds: ½ teaspoon
- Turmeric powder: ¼ teaspoon
- Red chili powder: ½ teaspoon (adjust to taste)
- Coriander powder: 1 teaspoon
- Garam masala: ½ teaspoon
- Salt: to taste
Preparation
Heat oil in a pan.
Add cumin seeds and let them splutter.
Add grated ginger and green chili; sauté for a few seconds.
Add chopped onions (if using) and sauté until translucent.
Add diced potatoes and cook for 2-3 minutes.
Add chopped French beans, tomatoes, turmeric, red chili powder, coriander powder, and salt.
Mix well, cover, and cook on low heat for 10-12 minutes, stirring occasionally.
Once the potatoes and beans are tender, add garam masala.
Cook for another 2 minutes without the lid to let any excess moisture evaporate.
Garnish with fresh coriander leaves if desired.
Serve hot with roti, paratha, or steamed rice.

Notes
- Use less oil and cook on low flame to retain nutrients.
- Add a squeeze of lemon juice before serving for extra tanginess.
