Ingredients:
- Whole Wheat Flour – 1/4 cup
- Oats Flour – 1/4 cup
- Cauliflower – 1/3 cup
- Hot Water – 1/4 cup or as required
- Salt – 1/2 tsp or as per taste
- (Optional) Carom Seeds (Ajwain) – 1/4 tsp
- Cumin Powder – 1/4 tsp
- (Optional) Black Pepper Powder – 1/4 tsp
- (Optional) Green Chilli – 1
- (Optional) Desi Ghee – 1 tsp
Instructions:
This recipe creates 2-3 rotis. For more rotis, increase the quantity of ingredients in the same ratio.
Take oats flour or grind the simple oats to form a smooth powder.
Add whole wheat flour and oats flour to a large container. Combine the flours together by hand for 1-2 min.
Now, slowly add hot water and mix it gently by hand. Keep on adding water till you obtain the dough of required consistency.
Set the dough aside for 10-15 minutes and let it rest.
Now, boil the shredded cauliflower in hot water until soft.
Mix boiled cauliflower, salt, cumin powder, and (optional) chopped green chilli, black pepper powder and ajwain in a separate bowl to make the stuffing.
Saute the stuffing for 5 minutes on medium flame.
Divide the dough into equal portions. Roll it to make balls, then flatten each portion with your hands.
Put this sauteed cauliflower stuffing into the middle of the flattened dough uniformly and roll using your hands again.
(Optional) Dust the dough with a small amount of wheat flour for easier rolling.
Roll the dough into medium-sized circles using a rolling pin (belan). It should be uniform and without any holes.
Heat the pan for 1-2 minutes, adjust the flame to medium and place the uncooked roti on it.
Cook the roti for about 30 seconds or until brown spots develop. Then flip and cook on the other side for another 30 seconds.
Remove it from pan and (optional) lightly brush the top of the roti with a small amount of desi ghee.
Repeat the process for the remaining dough.
Serve hot!
