Ingredients:
- Whole-grain bread slices: 2
- Hummus (any variety): 4 tbsp
- Cucumber (thinly sliced): 6-8 slices
- Tomato (thinly sliced): 4 slices
- Avocado (sliced or mashed): ¼
- Mixed greens (spinach, arugula, or lettuce): a handful
- Salt and black pepper: to taste
- Olive oil: 1 tsp (optional)
- Chili flakes or paprika: for garnish (optional)
Preparation
Toast the bread slices until golden and crisp.
Spread 2 tablespoons of hummus on each slice.
Layer cucumber slices, tomato slices, avocado, and mixed greens evenly over the hummus.
Sprinkle salt, black pepper, and chili flakes or paprika (if desired) on top.
Drizzle with a tiny amount of olive oil for added flavor (optional).
