Ingredients:
- Jowar (Sorghum): 1/2 cup
- Moong Dal (Yellow Lentils): 1/4 cup
- Water: 3 cups
- Onion: 1 small, finely chopped
- Tomato: 1 small, finely chopped
- Carrot: 1/4 cup, finely chopped
- Green Peas: 1/4 cup
- Green Chili: 1, finely chopped
- Ginger: 1/2 inch, grated
- Cumin Seeds: 1/2 tsp
- Turmeric Powder: 1/4 tsp
- Salt: to taste
- Coriander Leaves: 2 tbsp, finely chopped
- Olive Oil: 2 tsp
Instructions:
Soak and Prepare: Soak the jowar in water for 4-6 hours or overnight. Drain before use. Wash the moong dal thoroughly and drain.
Cook Khichdi: Heat olive oil in a pressure cooker over medium heat. Add cumin seeds and let them splutter. Add finely chopped onions, green chili, and grated ginger. Sauté until onions turn translucent. Add finely chopped tomatoes, carrot, and green peas. Cook for 2-3 minutes. Add soaked jowar, washed moong dal, turmeric powder, and salt. Mix well. Add 3 cups of water and stir to combine.
Pressure Cook: Close the lid of the pressure cooker and cook for 4-5 whistles or until jowar and dal are cooked well and soft.
Allow the pressure to release naturally.
Serve: Open the lid and stir the khichdi. Adjust the consistency by adding water if needed.
Garnish with freshly chopped coriander leaves.
