Ingredients
- Whole wheat flour: 1 cup
- Grated lauki (bottle gourd): ½ cup
- Green chilies (finely chopped): 1-2
- Ginger (grated): 1 tsp
- Fresh coriander leaves (chopped): 2 tbsp
- Ajwain (carom seeds): ¼ tsp
- Turmeric powder: ¼ tsp
- Red chili powder: ½ tsp
- Garam masala: ½ tsp
- Salt: to taste
- Water: as needed for kneading
- Ghee or oil: for cooking
Preparation
Squeeze the grated lauki lightly to remove excess water but reserve it for kneading the dough.
In a mixing bowl, combine the whole wheat flour, grated lauki, green chilies, ginger, coriander leaves, ajwain, turmeric powder, red chili powder, garam masala, and salt.
Add the reserved lauki water gradually and knead the mixture into a soft dough. Add more water if needed. Let the dough rest for 10-15 minutes.
Divide the dough into equal portions and roll each portion into a ball.
Flatten each ball slightly, dust with dry flour, and roll it out into a paratha.
Heat a tawa or skillet and cook the paratha on medium heat. Flip and apply a little ghee or oil on both sides, cooking until golden brown spots appear.
Repeat with the remaining dough portions.
Serve hot with yogurt, pickle, or chutney.
Servings: makes 4-5 parathas
Notes
- Avoid squeezing the lauki too much to retain its nutrients.
- Adjust spices as per your taste.
