Ingredients
- Boneless chicken breast: 250g (2 small pieces)
- Fresh lemon juice: 2 tbsp
- Lemon zest: 1 tsp
- Crushed black pepper: 1 tsp
- Garlic (minced): 2 cloves
- Olive oil: 1 tbsp
- Dried oregano: ½ tsp (optional)
- Salt: To taste
- Butter (for basting): 1 tsp (optional)
- Fresh parsley (chopped): 1 tbsp (for garnish
Preparation
In a bowl, mix lemon juice, lemon zest, black pepper, garlic, olive oil, oregano, and salt.
Coat the chicken breasts with the marinade.
Let it rest for at least 30 minutes (for better flavor, marinate for 2 hours)
Heat a grill pan/skillet on medium heat.
Cook the chicken for 5-6 minutes on each side until golden brown and fully cooked.
Baste with butter in the last minute for extra juiciness.
Garnish with fresh parsley and lemon slices.
Serve with grilled vegetables, salad, or quinoa for a balanced meal.

Notes
Use skinless chicken breast for lean protein.
Bake at 200°C (400°F) for 20 minutes if you prefer oven-cooked.
