Ingredients:
- Cauliflower – 2 cups, grated or processed into rice-sized pieces
- Onion – 1/2, finely chopped
- Carrot – 1, finely chopped or grated
- Oil – 1 tsp
- Green Chili – 1, finely chopped
- Yellow Capsicum (Bell Pepper) – 1, chopped
- Cloves – 5, finely crushed
- Red Chili Powder – 1/4 tsp
- Chaat Masala – 1/4 tsp
- Turmeric Powder – a pinch
- Soy Sauce – 1/2 tsp
- Vinegar – 1/2 tsp
- Sesame Seeds – 1/4 tsp
Instructions:
Soak the cauliflower in hot boiling water with salt for 5-7 minutes for its cleaning and grate it into small pieces. Set aside.
In a pan, heat the oil over medium heat. Add the finely chopped onion and sauté until it becomes soft. Add the finely chopped green chili and crushed cloves, and cook for another minute.
Add the Carrots and Capsicum: Stir in the chopped carrots and yellow capsicum. Cook for about 2-3 minutes until they start to soften.
Add the grated cauliflower to the pan. Stir in the red chili powder, chaat masala, and turmeric powder. Mix well to combine all the ingredients.
Pour in the soy sauce and vinegar. Mix well and cook for about 5-7 minutes, stirring occasionally. The cauliflower should be tender but not mushy.
Once cooked, turn off the heat and sprinkle sesame seeds over the cauliflower rice.
Serve the Cauliflower Rice hot!
