Ingredients:
- 1 cup bottle gourd (lauki), peeled and grated
- 1 cup curd (yogurt)
- 1 teaspoon cumin seeds
- 1/2 teaspoon chaat masala
- 1/3 teaspoon red chili powder
- 1/4 teaspoon black pepper
- Finely chopped coriander leaves (for garnish)
- Salt (to taste)
Instructions:
Prepare the Bottle Gourd: Peel and grate the bottle gourd. Boil the grated bottle gourd in water for a few minutes until it becomes tender. Drain and let it cool.
Roast the Cumin Seeds: In a small pan, dry roast the cumin seeds until they are fragrant and slightly browned. Let them cool and then grind them into a powder.
Prepare the Raita: In a bowl, whisk the curd until smooth.
Add the cooled grated bottle gourd to the curd.
Add the roasted cumin powder, chaat masala, red chili powder, black pepper, and salt. Mix well.
Garnish and Serve: Garnish with finely chopped coriander leaves.
Serve chilled as a side dish with meals.
