Ingredients:
- 1/3 cup oats
- 1/3 cup moong dal
- 1/3 cup tomatoes (chopped)
- 1 cup mixed vegetables (broccoli, cauliflower, beans, carrot)
- 1 tsp cumin seeds
- 1 tej patta (bay leaf)
- 1/3 cup onions (chopped)
- 1/2 tsp ginger garlic paste
- 1 green chili (chopped)
- 1/4 tsp turmeric powder
- 1/4 tsp red chili powder
- 2.5 cups water
- Salt to taste
- 2 tbsp coriander leaves (chopped)
- 1.5 tbsp ghee or oil
Instructions:
Prepare the Ingredients: Wash and soak the moong dal for 30 minutes. Chop the tomatoes, onions, and mixed vegetables.
Cook the Khichadi: Heat ghee or oil in a pressure cooker. Add cumin seeds and bay leaf. Sauté until fragrant. Add chopped onions and sauté until golden brown. Add ginger garlic paste and green chili, sauté for another minute. Add chopped tomatoes, turmeric powder, and red chili powder. Cook until tomatoes are soft. Add the mixed vegetables, oats, soaked moong dal, and salt. Mix well.
Pour in 2.5 cups of water and stir.
Pressure Cook: Close the lid of the pressure cooker and cook for 3-4 whistles.
Let the pressure release naturally.
Garnish and Serve: Open the lid and give the khichdi a good stir. Garnish with chopped coriander leaves.
Serve hot.
