Ingredients:
- 1 onion, chopped
- 1 cup oats
- 4 tomatoes, blended into a paste with 1/2 cup water
- 1/2 tsp ginger garlic paste
- 1 tsp soy sauce
- 1/4 cup carrot, chopped
- 1/4 cup beans, chopped
- 1/4 cup broccoli or cauliflower, chopped
- Juice of 1/2 lemon
- 1.5 cups water
- Salt, to taste
- 1 tsp olive oil
Instructions:
Sauté Onion: Heat olive oil in a pot. Add chopped onion and sauté until translucent. Add ginger garlic paste and cook until fragrant.
Cook the Vegetables: Add the blended tomato paste to the pot and cook for 2-3 minutes.Add chopped carrot, beans, and broccoli/cauliflower. Sauté for another 2-3 minutes.
Simmer the Soup: Add 1.5 cups of water, soy sauce, and salt to taste. Stir well.
Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes until the vegetables are tender.
Finish and Serve: Add lemon juice to the soup and stir.
Serve hot, garnished with fresh herbs if desired.
