Ingredients:
- Shirataki Rice Preparation:
- 80 grams organic dry Shirataki rice
- 2 cups water (or as needed)
pulao :
- 200g paneer (cubed)
- 1 cup mixed vegetables (carrots, peas, beans)
- 2 tbsp olive oil
- 1 bay leaf
- 1 inch cinnamon stick
- 2-3 cloves
- 1-2 green cardamoms
- 1 medium onion (sliced)
- 1 tsp ginger garlic paste
- 1 green chili (slit)
- 1 medium tomato (chopped)
- 1 tsp garam masala
- Salt to taste
- Fresh coriander leaves (for garnish)
Instructions:
Prepare Shirataki Rice: Rinse the Shirataki rice under cold water. Boil 2 cups of water and add the Shirataki rice. Cook until water is absorbed and rice is tender. Set aside.
Cook Pulao: Heat olive oil in a pan. Add bay leaf, cinnamon stick, cloves, and cardamoms. Sauté for a few seconds. Add sliced onions and sauté until golden brown. Add ginger garlic paste and slit green chili. Sauté until fragrant. Add chopped tomatoes and cook until they soften. Add mixed vegetables and cook for 5-7 minutes. Add paneer cubes, garam masala, and salt. Mix well. Add cooked Shirataki rice and mix gently.
Serve: Garnish with fresh coriander leaves.
Serve hot with yogurt or raita.
