Ingredients
- Paneer (cottage cheese): 100 g, cut into small cubes
- Capsicum: ¼ cup, diced
- Onion: ¼ cup, diced
- Yogurt (thick curd): 2 tbsp
- Ginger-garlic paste: ½ tsp
- Turmeric powder: ¼ tsp
- Red chili powder: ½ tsp (adjust to taste)
- Garam masala: ¼ tsp
- Cumin powder: ¼ tsp
- Salt: To taste
- Lemon juice: ½ tsp
- Oil/Butter: 1 tsp (optional, for roasting)
- Whole-grain or multigrain bread slices: 4
- Mint-coriander chutney: 2 tbsp

Preparation
- In a bowl, mix yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, cumin powder, salt, and lemon juice.
- Add paneer cubes, capsicum, and onion to the marinade. Mix gently and let it rest for 15-20 minutes.
- Spread a thin layer of mint-coriander chutney on one side of each bread slice.
- Place the paneer tikka filling on one slice.
- Add a cheese slice (optional) and cover with another bread slice.
- Toast the sandwich on a tawa, grill, or sandwich maker until golden brown and crispy. Use butter or olive oil sparingly, if desired.
Notes
- Use low-fat paneer and whole-grain bread for a healthier version.
- Ensure the paneer and vegetables are not overcooked to retain their texture.
