Ingredients:
- 4 cups pumpkin, peeled and cubed
- 1/2 cup onion, finely chopped
- 1 tomato, chopped
- 1 tsp cumin seeds
- 1 green chili, finely chopped
- 1/2 tsp red chili powder
- 1/4 tsp turmeric powder
- 1/4 tsp garam masala
- 2 cups water
- 2 tsp oil
- Salt to taste
Instructions:
Prepare the Tempering: Heat 2 tsp oil in a pressure cooker. Add cumin seeds and let them splutter. Add finely chopped onions and sauté until golden brown. Add green chili and sauté for a minute.
Add Tomatoes and Spices: Add chopped tomato, turmeric powder, red chili powder, and garam masala. Cook until the tomatoes soften.
Add Pumpkin: Add the cubed pumpkin to the cooker and mix well. Add salt to taste and 2 cups of water.
Cook: Close the lid of the pressure cooker and cook for 2-3 whistles on medium heat.
Finish and Serve: Release the pressure and open the cooker. Garnish with fresh coriander leaves.
