Ingredients
- Amaranth/ rajgira seeds: 1 cup
- Water: 2 cups
- Milk: 1 cup (optional, for a creamier texture)
- Jaggery or honey: 1-2 tbsp (to taste)
- Cardamom powder: ¼ tsp
- Chopped nuts (almonds, cashews, or walnuts): 1 tbsp
- Raisins: 1 tbsp (optional)
Preparation
Rinse the amaranth seeds thoroughly under water.
In a saucepan, bring water to a boil. Add the rinsed amaranth seeds and reduce the heat to a simmer.
Cook the amaranth for about 15-20 minutes, stirring occasionally, until the seeds become soft and have absorbed most of the water.
Add milk, cardamom powder, and sweetener (jaggery or honey) to the amaranth. Stir well and cook for another 5-7 minutes until it reaches a porridge-like consistency.
Garnish with chopped nuts and raisins.
Serve hot as a wholesome breakfast or snack.
Servings: 2 servings.
Notes
- You can skip milk for a dairy-free version and adjust the consistency using water.
- For an extra boost of nutrition, you can add chia seeds or flaxseeds while cooking.
