Ingredients:
- 1 cup fine rice flour
- 2 cups hot water
- ¼ tsp salt
- 1 tsp olive oil
Instructions:
Prepare the Dough: Bring 2 cups of water to a boil and add ¼ tsp salt. Gradually add rice flour while mixing with a whisk or spoon. Mix until the water is absorbed and the flour forms a dough.
Knead the Dough: Allow the dough to cool slightly, then knead it until smooth. Optionally, add a little oil to make it smoother.
Divide the dough into 10 equal-sized balls.
Roll the Rotis: Dust each dough ball with dry rice flour. Roll out each ball into a thin, even roti on parchment paper, adding more rice flour if needed.
Cook the Rotis: Heat a tawa (griddle) on medium heat. Place a rolled roti on the tawa and cook until small bubbles form. Flip the roti and cook the other side until more bubbles form.
Flip again and press gently to help the roti puff up.
Once cooked, place the roti on a muslin cloth or paper towel and store in a closed container to keep them soft.
