Ingredients:
- Makhana – 1 cup
- Curry Leaf – 9
- Mint Leaf – 2
- Chat Masala – 1 tsp
- Black Pepper – 1/2 tsp
- Salt -1/2 tsp or as per taste
- Ghee – 1 tsp
Instructions:
In a pan, add 1 tsp of desi ghee and heat it on medium flame until it melts and becomes slightly hot.
Once the ghee is hot, add the curry leaves to the pan. Sauté them for a few seconds until they become crispy.
Add makhana to the pan with the crispy curry leaves.
Roast the makhana on a low to medium flame, stirring continuously to ensure even roasting. Roast them for about 5-7 minutes until they become crunchy.
Once the makhana are roasted, add chopped mint leaves, chaat masala, salt, and black pepper to the pan.
Mix all the ingredients well so that the makhana are evenly coated with the spices and herbs.
Continue to roast the makhana for another 2-3 minutes to allow the flavors to blend well and for the makhana to absorb the seasoning.
Once done, turn off the heat and let the roasted makhana cool for a few minutes.
