Ingredients:
- Samak Rice – 1 cup
- Ghee – 1 tbsp
- Water – 3 cups
- Cumin seeds – ½ tsp
- Green Chilli – 1
- Curd – 2 tbsp
- Rock Salt – as per taste
- Coriander Leaves – for garnishing
- (Optional)Roasted Peanuts – 2-3 tsp
Instructions:
This recipe will make 2 servings.
Rinse the samak rice a couple of times, similar to how you rinse rice. Soak it in enough water for an hour, then drain and set aside.
Heat some ghee in a pan and add cumin seeds and green chili. Cook them for about a minute.
Put in samak rice and cook it with the spices for 2-3 minutes.
Pour in water and add rock salt (sendha namak) as per taste. Stir everything well.
Cover the pan with a lid and let it cook for 15-20 minutes. Remember to stir occasionally.
Check the khichdi’s consistency when the rice has puffed up and is fully cooked. If it’s too firm, add 1 cup of boiling water and cook for an additional 4-5 minutes.
Garnish the khichdi with coriander leaves and it’s ready to be served.
