Sauteed veggies sandwich

Ingredients:

  • 1/2 cup of carrot (chopped)
  • 1/2 cup of cabbage (chopped)
  • 1/2 cup of mixed bell peppers (red, yellow, green) (chopped)
  • 1/2 cup of mushrooms (sliced)
  • 1/3 cup of onion (chopped)
  • 1 clove of garlic (finely chopped)
  • 1 teaspoon of oregano
  • 1 teaspoon of chili flakes
  • Salt (according to taste)
  • 1/2 teaspoon of oil
  • 1 teaspoon of lemon juice
  • 4 slices of bread

Instructions:

Sauté Vegetables: Heat 1/2 tsp oil in a pan. Add garlic and onion, sauté until translucent. Add carrots, cabbage, bell peppers, and mushrooms. Cook until tender. Season with oregano, chili flakes, and salt.

Add lemon juice and mix well.

Assemble Sandwich: Spread the sautéed vegetables evenly on two slices of bread.

Top with the remaining slices.

Grill Sandwich: Grill the sandwiches until the bread is golden brown and crispy.

Serve: Serve hot with your favorite dipping sauce or chutney.

Serving Size: Makes 2 sandwiches
