Preparation
In a bowl, whisk the egg whites until slightly frothy.
Heat olive oil or butter in a non-stick pan over low-medium heat.
Pour the egg whites into the pan and let them cook undisturbed for a few seconds.
Stir gently with a spatula, pushing the eggs from the edges to the center.
If using, add chopped spinach or bell peppers while stirring.
Continue cooking until the egg whites are soft and slightly creamy (avoid overcooking).
Season with salt, black pepper, and garlic powder.
Garnish with fresh herbs and serve warm.
