Ingredients:
- Sooji (Semolina): 1 cup
- Water: 2.5 cups
- Onion: 1, finely chopped
- Carrot: 1/4 cup, finely chopped
- Beans: 1/4 cup, finely chopped
- Green Peas: 1/4 cup
- Tomato: 1, finely chopped
- Green Chili: 1, finely chopped
- Ginger: 1/2 inch, grated
- Cumin Seeds: 1/2 tsp
- Mustard Seeds: 1/2 tsp
- Curry Leaves: 8-10
- Turmeric Powder: 1/4 tsp
- Salt: to taste
- Olive Oil: 1 tbsp
- Coriander Leaves: 2 tbsp, chopped
instructions:
Roast the Sooji: In a dry pan, roast the sooji on medium heat until it turns golden brown. Set aside.
Prepare the Tempering: Heat olive oil in a large pan. Add mustard seeds and cumin seeds.Once they splutter, add curry leaves, green chili, and grated ginger. Sauté for a minute.
Cook the Vegetables:Add chopped onions to the pan and sauté until they turn translucent.Add chopped carrots, beans, green peas, and tomatoes. Cook until the vegetables are tender.
Add the Sooji:Add the roasted sooji to the vegetable mixture and mix well.
Cook the Upma:Pour in the water, add turmeric powder, and salt. Stir well.Cover and cook on low heat until the sooji absorbs the water and is fully cooked, stirring occasionally.
Garnish and Serve:Garnish with chopped coriander leaves and serve hot.
