Ingredients
- Sweet corn kernels (boiled): 1 cup
- Tomato: 1 small (finely chopped)
- Cucumber: 1 small (finely chopped)
- Onion: 1 small (finely chopped)
- Capsicum (green or red): ¼ cup (finely chopped)
- Fresh coriander leaves: 2 tbsp (chopped)
- Lemon juice: 1 tbsp
- Black pepper powder: ¼ tsp
- Chaat masala: ½ tsp
- Salt: To taste
- Pomegranate seeds: 2 tbsp (optional, for garnish)
Preparation
Boil the sweet corn kernels in lightly salted water for 5-7 minutes. Drain and let cool.
Chop all the vegetables and keep them ready.
In a mixing bowl, combine boiled sweet corn, tomato, cucumber, onion, and capsicum.
Add salt, black pepper powder and chaat masala. Toss well.
Squeeze fresh lemon juice over the salad and mix gently.
Garnish with coriander leaves and optional pomegranate seeds for a touch of sweetness.
Serve immediately as a healthy snack, side dish, or light meal.

- Add finely chopped carrots or lettuce for an extra crunch.
- Prepare just before serving to retain the crispness of the vegetables.
- Use fresh, frozen, or canned sweet corn based on availability.
