Ingredients
- Thick Poha (Rice Flakes) – 1 cup
- Water- for rinsing poha
- Mustard/Olive Oil – 2 tsp
- Raw Peanuts – 1 tbsp
- Mustard Seeds – 1/4 tsp
- Cumin Seeds (Jeera) – 1/4 tsp
- Onion – 1 medium-sized
- Chopped Veggies (Carrot, Green Peas, French Beans, Capsicum) – 1 cup total
- Green Chilli (finely chopped) – 1
- Curry Leaves – 5
- Turmeric Powder – 1/4 tsp
- Salt – 1/2 tsp, or as per taste
- Chopped Coriander Leaves- for garnishing
- Lemon – 1/2
Instructions
This recipe will make 1 serving of Vegetable Poha (rice flakes).
Add 1 cup poha in a bowl, add water and soak for 2 minutes. After soaking, drain out the excess water.
Let the drained poha rest for 5 minutes and keep it aside.
Take a kadhai and add 2 tsp mustard/olive oil to it.
Add 1 tbsp raw peanuts to the kadhai and roast them on low to medium flame.
Once the peanuts turn golden brown, shift them in a separate bowl and keep them aside.
Now, add 1/4 tsp of mustard seeds to the kadhai with the same oil and let them crackle for a few seconds.
Then add 1/4 tsp cumin seeds, 1 chopped onion, 1 cup chopped veggies of your choice, 1 finely chopped green chillies, and 5 curry leaves to the kadhai and saute for 1 to 2 minutes.
Add 1/4 tsp of turmeric powder and saute again for a few seconds.
Add the drained poha and salt as per taste to the kadhai.
Mix and combine everything well; cover and cook on low to medium flame for 2-3 minutes.
Once cooked, switch off the flame.
Add a few chopped coriander leaves, roasted peanuts and squeeze 1/2 lemon into it.
Mix well and serve Poha warm. Enjoy!

Use any of the veggies (Carrot, Green Peas, French Beans, Capsicum) as per availability.
